Master Mezcalier Certification ProgramSpirits of Mexico is proud to have been selected as the exclusive organization to premiere the Master Mezcalier Certification Program in 2011. Two introductory sessions of course level #1 were launched exclusively at the Spirits of Mexico Festival in San Diego in September and the Spirits of Mexico Event in New York City in October . We anticipate adding certification classes during all of the Spirits of Mexico events in 2012.
The program consists of ascending Levels of courses as sanctioned by CONOCER (Consejo Nacional de Normalizacion y Certificacion de Competencia Laborales), COMERCAM (Consejo Mexicano Regulador de la Calidad del Mezcal), the Conservancy of Mexican Gastronomy, A.C. (Conservatorio de la Cultura Gastronomica Mexicana) and the Asociacion Pro Mezcal Culture A.C. This program was written into Mexican law on Aug.2011 and published in the Mexican Law Journal.
Level 1 Basic Mezcalier Includes in-depth information about Mezcal production, certification, law, agaves used for production, Denomination of Origin, the essentials of what Mezcal is and how it is defined.
Level 2 Intermediate Mezcalier Mezcal as an alcoholic ingredient in beverages and cocktails
Level 3 Advanced Mezcalier Will take place in a restaurant setting and will cover Mezcal, in-depth, in food preparation and recipes as well as restaurant server etiquette. Participants will work hands-on incorporating Mezcal with food and beverage in levels #2 and #3.
Level 4 Master Mezcalier Achieving the Title of Master Mezcalier will take place in Oaxaca. Participants will visit various distilleries, agave fields, restaurants and historical settings. This course will be conducted over several days.
A certificate is issued from Comercom after the successful completion of each course. Once the full program is up and running we recommend that there be at least 4 months between courses.
